Palouse Juice Celebrates One Year in Moscow

By Nicole Hindberg on January 11, 2019

Palouse Juice is a locally-owned restaurant located in downtown Moscow. This 100% organic restaurant opened in January of 2018. Their slogan is “Where healthy is delicious.” In Moscow, restaurants like this are not very common because these products are seen as expensive and aren’t in high demand especially since Moscow is a farming town. Residents don’t want to go to an expensive restaurant when they can get their own fruits and vegetables in their garden. This is the misconception that residents have about this restaurant. Many see it as “just an expensive juice place.”

To many residents’ surprise, this place sells a lot more than just smoothies or juice. They have meals such as Acai bowls and Chakra bowls that use fresh kale, spinach, and organic quinoa. The residents are also offered advice on healthy lifestyle choices and choosing the right foods. This restaurant prides itself in purchasing from local farms in season. They also have suggestion cards near the register for new foods if it is not on the menu because they want to “service their customers in any capacity.” They also offer support and information in juice cleanses.

Owner Toni Salerno-Baird and her husband opened this business back in 2018 in order to promote a healthy lifestyle for those in the community. Prior to her opening this restaurant, she had an illness that her doctors weren’t able to treat. In response to this, she researched holistic healing medicines. Within a few months, she was able to get healthy and live a more active lifestyle than she had before she got sick. About two years before she opened this restaurant, she tried in other locations, but the business failed. Feeling discouraged, she started developing her own recipes that would later be on the menu of Palouse Juice. Those new and unique recipes are the reason the business has boomed in the year that it has been here.

In order to celebrate this successful year, her and her husband put on event this week called “Palouse Juice celebrates: A year of awesome”. The event was a success and was filled with loving and supportive clients. During the night, Salerno-Baird recognized that many of the attendants to the event were new clients. This was the first time they put on this type of event with door prizes, raffles and samples. She said that this type of promotional night helped the skeptics in recognizing benefits of this type of restaurant. The business owners are happy with the results of the night and are hopeful for more years to come. Salerno-Baird is hopeful she can reach other skeptics so they can come in and try the food for themselves.
